I used mini choco chips and white chips for a little variation. Everyone of these muffins stuck to the bottom of the pan. I did spray both pans-maybe it was the type of spray i used. I couldn't taste the coffee in them either. I also used a bit less milk than the recipie called for but i made up the difference with some mocha mudslide coffee creamer. I substituted a 1/3 cup applesauce for the egg and buttermilk in place of milk and they were very light and fluffy and tasty! I also used mini chocolate chips.
